For some of us, cookie dough is just as good as the baked cookies themselves. Here’s a nearly whole food version that uses garbanzo beans instead of wheat flour. It’s free of gluten, diary, and eggs. Still sweet and excellent with a glass of coconut milk.
I love the idea of turning these into frozen cookie bites. I did this by spooning bite sized pieces onto my silicon cookie tray liner (Silpat – http://silpat.com) and placing them in the freezer. I like the silpat because it’s naturally non-stick and flexible.
